Chicken Spring Rolls

Summer rolls are such a satisfying light meal when the days are hot. Using rotisserie chicken cuts down even more on the heat the in the kitchen.

    Ingredients

    • 1 c. shredded chicken
    • 1 medium carrot, julienned
    • 1 medium cucumber, julienned
    • fresh herbs (mint, basil, cilantro)
    • 1 c. thin vermicelli rice noodles, prepared per package directions
    • 6 rice wrappers
    • peanut sauce

    Cooking Instructions

    Preparing two at a time, dip 2 rice paper rounds in a shallow bowl of water and then lay each of the rounds on a clean, damp kitchen towel. Allow to sit for 2- 3 min until soft.

    Place herbs on the bottom one third of the rice paper leaving a one inch border on the sides. Next, place a small amount of the remaining ingredients on top of the herbs. Fold in the sides towards the center and begin to roll tightly. Place the roll down on its seam side and cover with a damp towel while preparing the remaining rolls.

    Serve with peanut sauce.
