DESCRIPTION:This class is SOLD OUT! Due to popular demand\, a second class has been added at a later date: Sign Up \nJoin Chef Jennifer Romero in this class and you will create a beautiful\, traditional Spanish saffron-infused rice dish called paella with bold ingredients and complex flavor notes. Under Chef Jennifer’s tutelage\, you will learn more about the history of paella\, learn necessary knife skills and make an authentic Paella de Mariscos using fresh\, seasonal vegetables\, prawns\, clams\, mussels and more in a relaxed and fun environment all while meeting new people and making new friends. At the end of the cooking class\, you will all sit down and enjoy a wonderful meal together. Glasses of Spanish wine will be available for sale in the class. \nAbout the Instructor: Chef Jennifer is passionate about paella. She has taken paella classes from master Chefs in Valencia\, Spain where paella originated. She graduated from the American River College’s prestigious Culinary Arts and Hospitality & Restaurant Management program and is the owner of Hooked on Paella\, a catering company that specializes in creating paellas with fresh\, locally sourced ingredients in the greater Sacramento region. DESCRIPTION:Tapas are meant to be shared\, so this festive menu is perfect for a party! In this hands-on class\, you will work with a small group of students to make mushrooms with white wine and garlic\, stuffed piquillo peppers with fresh goat cheese\, and the classic egg tortilla! You will cook along with Chef Lucia and enjoy your festive appetizers in class. We limit this class to 10 students so each person gets a quality experience. Glasses of wine will be available to purchase in this class. \nAbout the Instructor:\nLucia Oliverio’s philosophy is cooking should be fun and uncomplicated\, creating the best memories with your family in the process. Recipes should be simple\, taking the freshest ingredients and elevating them. Lucia’s Italian immigrant mother and grandmother are her mentors who started her cooking journey. At 21\, she was diagnosed with Multiple Sclerosis. Since then\, she has learned about food’s power in healing the body. Lucia has a BS in Science in Nutrition and Food.

DESCRIPTION:Bring your friends and family for a fun weeknight hands-on cooking class and learn how to make everyone’s favorite Middle Eastern street food — falafels! Shankari will lead you through the step-by-step process of creating delectably crispy falafel from scratch. From forming the perfect mixture to achieving the ideal texture\, you’ll gain insider tips and tricks that will make your falafel truly exceptional. Once you’ve made your falafel\, you will stuff it in pita bread and top it with a homemade green tahini sauce and a creamy yogurt-cucumber sauce. These will be the best falafels you’ll ever have!\n \nAbout the Instructor: Shankari Arcot was born and raised in India. She has fond memories of her mother making all of their food from scratch and when Shankari moved to the states\, she continued to have a deep love for her mom’s cooking and became passionate about learning how to make the dishes she grew up eating so she could share them with friends and family. Shankari’s proudest moment was winning the Iron Chef competition at the California State Fair. For the past fifteen years\, Shankari has been teaching classes in our learning center\, as well as giving guest lectures to the culinary students at The American River College and teaching global cooking to homeschooling families.
