Potato Pancakes

Ingredients

  • 2 cups mashed potatoes 
  • 1 egg
  • 1⁄4 cup flour
  • salt
  • pepper
  • garlic
  • onion, shredded (optional)
  • chives (optional)
  • oil or fat, for frying
  • sour cream or applesauce, for garnish (optional)

Cooking Instructions

Mix mashed potatoes, egg, flour, salt, pepper, garlic, and any optional ingredients, into
mashed potatoes.

Heat a large skillet over medium high heat and add the oil or fat. Form potato mixture
into patties.

Once the oil is hot, add the patties to the hot oil – do not crowd the pan. Fry until deep
golden on both sides.

Remove to a rack to drain oil, or a plate lines with paper towel or paper bag.

Serve with a dollop of sour cream or applesauce.
