Rotisserie Chicken Salad

A simple way to turn your rotisserie chicken into a quick meal is by making chicken salad! You can swap out the mayo for greek yogurt or sour cream, apples can be used instead of grapes and the almonds can be swapped with any nut or seed.

    Ingredients

    • 1/2 cup sliced almonds
    • 1 cup mayonnaise
    • 1 tablespoon Dijon mustard
    • 1 cup red grapes, quartered
    • 2 stalks celery, diced
    • 3 green onions (green and white parts), sliced
    • 2 tablespoon chopped parsley
    • 1 tablespoon chopped tarragon
    • 1 lemon , juiced
    • salt and pepper, to taste
    • 1 whole Rotisserie chicken, picked and shredded or chopped

    Cooking Instructions

    Combine all ingredients except chicken to a mixing bowl. Add chicken and season to taste. Enjoy on a bed of greens or on fresh sourdough!
