Chai Tea

    Ingredients

    • 2 t. fresh root ginger, finely sliced
    • 2 t. whole fennel seeds
    • 1/4 t. black peppercorns
    • 1 fresh bay leaf
    • 15 cardamom pods
    • 6 whole cloves
    • 1 cinnamon stick
    • 1 t. black tea leaves
    • 8 fl oz. milk of choice
    • sweetener of choice

    Cooking Instructions

    In a saucepan, combine 24 fl oz. cold, filtered water with the ginger, fennel seeds, black peppercorns, bay leaf, cardamom pods, cloves and cinnamon stick. Bring to a boil, then cover and simmer for 5 minutes. Take the pan off the heat, add the tea, and let it steep for 5-10 minutes.

    Strain through a sieve into a large jug, add the milk and sweetener and serve immediately.

    This can also be made ahead by following all of the instructions in step 1 and straining the concentrate. Sweeten to your liking and store in the refrigerator for as long as a week. Add milk when you’re ready to reheat or enjoy it chilled.
