Everyday Frittata

The ingredients in this Everyday Frittata can be mixed up as you like. Add cooked potato, broccoli, fresh herbs or mix up the cheeses to your liking. This can be enjoyed warm or cold.

    Ingredients

    • 6 large eggs
    • 1/2 cup sour cream
    • 1/2 tsp sea salt, more for spinach and onions
    • 1 cup grated mozzarella cheese
    • 1 cup frozen spinach (from one 10-ounce package), thawed and squeezed dry
    • 1/2 medium onion, diced
    • 1 Tbsp olive oil

    Cooking Instructions

    Preheat the oven to 400F. Whisk eggs, sour cream and salt until you get a smooth and even texture. Set aside.

    In a 9-inch ovenproof nonstick or cast iron skillet, heat oil over medium-high. Add onion and cook until onion is translucent, about 5 minutes. Add spinach and season with salt and pepper.

    Pour the egg mixture into the pan and sprinkle the cheese on top. Using a fork, distribute the cheese around a little to incorporate it into the eggs. Bake for 15 to 17 minutes, or until the edges are set and the top is lightly browned.
