Gazpacho

Beat the summer heat with a refreshing and vibrant gazpacho. Bursting with the flavors of ripe tomatoes, crisp cucumbers, cubanelle peppers, and zesty herbs, this chilled soup is the perfect way to cool down and nourish your body.

    Ingredients

    • 1 large cucumber, peeled, chopped
    • 2½ pounds ripe tomatoes, chopped
    • 2 cubanelle peppers, stemmed, seeded & chopped
    • 1 torpedo onion, chopped
    • 2 garlic cloves
    • ¼ cup chopped basil, plus more for garnish
    • 3 tablespoons sherry vinegar
    • ½ cup extra virgin olive oil
    • freshly ground black pepper to taste
    • sea salt to taste

    Cooking Instructions

    Add half of each ingredient to a blender. Blend until smooth. Pour into large bowl or pitcher.

    Repeat with remaining ingredients, stir to combine and season to taste and chill for at least 2 hours.

    Serve the soup with fresh herbs, drizzles of olive oil, and freshly ground black pepper.
