Maple Glazed Carrots

This very simple and delicious recipe is sure to be a hit for the holidays. This can easily be made vegan by substituting a plant-based butter. Maple-glazed carrots make the perfect complementary side dish.

    Ingredients

    • 2 small bundles of carrots (peeled, ends cut off, and cut diagonally into 3-4 pieces)
    • 3 tbs. butter
    • 3 tbs. maple syrup
    • 1-2 cloves garlic, minced
    • 1 tbs. fresh parsley, chopped
    • 1 tsp. sea salt and pepper

    Cooking Instructions

    Pre-heat oven to 400°.

    In a large sauté pan, melt vegan butter, add maple syrup and stir.

    Add garlic, salt, and pepper. Sautee for 1-2 minutes.

    Add the carrots and stir until carrots are well coated.

    Spread glazed carrots into a single layer onto a lined baking sheet.

    Roast for 20 minutes; stir carrots and roast for another 20 minutes, until fully cooked. Remove from oven. Garnish with parsley, salt and pepper. Serve warm.
