Roasted Balsamic Brussels Sprouts

Ingredients

  • 2 lb Brussels sprouts, trimmed and cut in half or quarters
  • 1/2 red onion, sliced
  • 1 1/2 tsp. Dijon Mustard
  • 2 Tbsp. maple syrup
  • 2 Tbsp. olive oil
  • 2 tsp. sea salt
  • 2 Tbsp. balsamic vinegar

Preheat oven to 350°.

 Mix all of the ingredients in a large bowl.

Spread on a baking sheet and roast until tender, about 20 minutes. When cool enough to handle, adjust seasoning to taste and serve immediately.
